nonnie’s carrot cake

After a glorious weekend away, we had to come back to reality. Back to work for both of us. But the upside to getting back to our regular routine is that I have Sundays at my disposal. Jordan works all day Sundays and so I’m left to my own devices. I like to think of Sunday as my project day. Usually this means walking Willow, putting off showering, planning dinners for the week (or as many days I as I can figure out/carry home), going grocery shopping, cooking something, listening to a lot of 99% Invisible, walking Willow some more, and maybe blogging, but usually procrastinating by checking Instagram, cleaning algae off my shower curtain or watering my plants. It’s rather glamorous.

But really, I’ve come to love having a day to myself to work on my things, whatever those things happen to be. Usually it’s food, but sometimes it’s putzing with a camera or trying to get better at calligraphy. It’s energizing to have time to myself, though maybe not quite as refreshing as no cell phone service, fresh air and a stunning view of vineyards.

I made this cake on one such Sunday, I think it was last weekend, but it could have been the one before. Carrot cake is one of those desserts that you only really have once a year, usually around Easter. Something about bunnies and carrots, maybe? It’s is a neglected cake flavor, up against a tough crowd. Honestly, it’s hard to be a vegetable and hold a candle to dark chocolate or vanilla bean. But I happen to really like carrot cake and think it deserves a little more time in the spotlight. It popped into my head to make it, and so I did, even though Easter is long past. Cake doesn’t have to be chocolate to be delicious, especially if it has cream cheese icing.

This carrot cake is recipe from my Nonnie, which means it is pretty much perfect. It’s moist, delicately spiced, and easy to make. It doesn’t have raisins lurking in its layers, but you do get a little crunch from the pecans. The cream cheese frosting is also divine, and good on just about anything you can think to put it on. My Nonnie usually makes this cake in a 9″ x 11″ dish, but two stacked rounds with frosting sandwiched in between are just too cute to resist. Add a few more minutes to the baking time if you prefer a single layer cake.

Nonnie’s Carrot Cake with Cream Cheese Frosting
1 1/2 cups flour
1 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt
2 eggs
1/2 cup crushed pineapple in juice (seems strange, but it’s the magic ingredient)
1 cup carrot, grated (about two large carrots)
1/2 cup pecans, chopped
2/3 cup neutral-tasting oil
1 teaspoon vanilla extract

Preheat an over to 350 degrees. Butter, line with parchment paper, butter again and flour two 8″ round baking pans. Experience has taught me that taking the extra time to add a layer of parchment really does make it easier to extract cakes from their molds.

In a medium bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, ginger, nutmeg and salt. In a large bowl, whisk together eggs, pineapple, carrot, pecans, oil and vanilla. Add the dry ingredients to the wet and mix to combine.

Divide into the two pans. Bake at 350° F for 25 to 30 minutes, or until a cake tester inserted comes out clean. Take care to not over-bake this cake, the moistness is spectacular if you don’t overdo it. Cool on a rack and frost when cooled.

Cream Cheese Frosting
6 oz cream cheese, softened
4 tablespoons butter, softened
1 teaspoon vanilla extract or 1/2 teaspoon vanilla paste
dash of salt
2 1/2 cups powdered sugar, sifted (especially if you live in damp SF)

Cream butter, cream cheese, vanilla and salt until light and fluffy. Add powdered sugar and beat until smooth. Frost just about anything and I guarantee you’ll love it!

chicken pot pie

The chicken pot pie of my childhood was made by Marie Callender’s. It was a personal pot pie, and it baked in the oven for what seemed like an eternity. My favorite part was the crust coated in that creamy pot pie sauce. Well, this chicken pot pie a thousand times better, though it’s a time commitment. Between making the pie crust, roasting chicken, blanching vegetables, making a bechamel, you’re in it for the long haul. But it’s worth it.

I’d recommend making chicken pot pie when you have left over meat from roasting a chicken and chicken enchiladas or chicken soup don’t sound appealing. I’d also recommend it for a crowd – a single slice will fill you up. You could very easily make this ahead of time, freeze it and bake it straight from the freezer, adding 20 – 30 minutes of additional bake time.

Chicken Pot Pie, adapted from Ad Hoc at Home
Pie Crust
2 1/2 cups all purpose flour
1 1/4 teaspoons kosher salt
2 1/2 sticks unsalted butter
about 5 tablespoons ice water

Filling
1 cup red skinned potatoes, peeled and cut into 1/2 inch pieces
1 cup carrots, peeled and cut into 1/2 inch pieces
12 pearl onions, peeled
1 cup celery, cut into 1/2 inch pieces
3 bay leaves
3 thyme sprigs
1/2 tablespoon peppercorns
1/2 cup peas
2 cups cooked chicken, cut into 1/2 inch pieces

Bechamel
3 tablespoons butter
3 tablespoons flour
3 cups milk
1 teaspoon kosher salt
black pepper
1 tablespoon parsley
1/2 teaspoon fresh thyme
pinch of cayenne

Make the pie crust the night before. In a food processor, combine flour and salt. Remove the butter from the fridge and cut into 1 inch cubes. Add them to the flour mixture. Process until the butter chunks are about the size of peas. Add the water and pulse a few times to combine. Divide into two equal balls, wrap in plastic wrap and refrigerate.

Preheat your oven to 375 degrees. Remove the dough from the fridge and let it warm just slightly. Roll out the dough and place one piece in a 9 inch pie pan. Cut around the edges and put it back in the fridge. Roll out the second piece of dough into a 12 inch round. Place on a baking sheet and put it back in the fridge.

Bring a pot of water to boil. Add the bay leaves, thyme and pepper corns. Salt the water until it tastes like sea water. Blanche the potatoes, carrots and onions for 8 minutes. Add the celery and cook for another two. Strain the vegetables from water, pour them onto a sheet pan and discard the spices.

In a medium pan over medium heat, melt the butter. Add the flour and whisk for 2 to 3 minutes, until the mixture is light brown. Whisk in the milk. Let the sauce come to a boil to thicken, stirring often. Remove from the heat. Add the salt, pepper, thyme, parsley and cayenne. Make sure you’re happy with the seasoning.

Remove the bottom crust from the fridge. Scatter the blanched vegetables, frozen peas and chicken in the pie shell. Pour the bechamel over the pie. Beat an egg in a small bowl. Moisten the rim of the shell with some of the egg. Top it with the other crust. Pinch around the edges and cut off the excess. Brush the top with the egg. Cut a small vent in the top crust to allow steam to escape.

Bake on the lower rack of 375 degree oven until the crust is golden brown, 45 minutes to 1 hour. Remove the pie and let rest for 10 minutes. Cut into wedges and serve warm.

pot roast for amanda

My grandmother, my Nonnie, makes a wonderful pot roast. So good is her pot roast that she clandestinely prepares it in her home kitchen and sneaks it into a bay area restaurant where it is then served to their very happy patrons. “Nonnie’s Pot Roast” it’s called on the menu and I’m proud to say that the “Nonnie” on the menu isn’t some imaginary Italian grandma, she is my Nonnie and she’s a damn good cook—though we’re not actually Italian.

When my friend Amanda needed a pick me up—and don’t we all know that sometimes the only think that can really pick you up is a good home-cooked meal—I decided to make my Nonnie’s pot roast. As it turns out, pot roast is one of Amanda’s favorite childhood meals, and I think she was smitten. Pot roast might not be the prettiest or the most elegant of dishes, but it will certainly warm your soul, and some days that counts for a lot.

Nonnie’s Italian-Style Pot Roast
2 lbs chuck roast
2 tablespoons olive oil
1 large onion, diced
4 cloves of garlic, chopped
2 bay leaves
1 – 8 oz can chopped tomatoes
3 – 4 large carrots, cut into chunks (or a handful of baby carrots)
1/2 cup red wine
2 – 3 cups beef broth (enough to nearly cover the meat)
salt and pepper

Buttermilk Mashed Potatoes
2 lbs yellow potatoes (I like Yukon Golds)
4 tablespoons butter
1/3 – 1/2 cup buttermilk
salt and pepper

Preheat an oven to 325 degrees. Season the chuck roast liberally with salt and pepper on both sides. In a large cast iron pan, heat 2 tablespoons of olive oil over medium-high heat. When the oil is shimmering, add the meat. Sear both sides, until deep brown in color about 8 – 10 minutes per side. Remove the meat and set aside.

Reduce the heat to medium-low. Saute the onions in the meat juices until translucent, 6 – 8 minutes. Add the garlic and saute a two minutes more. Add the wine to deglaze, making sure to scrape the browned bits off the bottom of the pan. Return the meat to the pan. Add the bay leaves, tomatoes, carrots and broth. Return to a boil.

If you’re making the roast on a weeknight, you can make the pot roast up to this point and refrigerate it then finish it in the oven the next day. Or you can cook it for a few additional hours until you’re ready for bed and then finish it for another hour or so the next day. It will need about 3 hours braising time in a low oven to become perfectly tender, and will happily adjust to whatever schedule suits you.

Cover the pot with a lid and place in a 325 degree oven. Cook for 3 hours, until the meat is tender. When you have about 1 hour left on the cooking time, start the mashed potatoes.

Peel the potatoes and cut them into quarters. Put them in a large pot and cover with water. Season the water liberally. It should taste like sea water. Cover and turn the heat to medium-high. Cook potatoes 25 – 35 minutes, until fork-tender. Drain the water. Add the butter and beat the potatoes with a mixer or mash with a potato masher. Add the buttermilk and mix well. Season with salt and pepper. Potatoes generally need a lot of salt to taste good – keep this in mind while seasoning your potatoes.

Remove the pot roast, carrots and bay leaves from the braising liquid and set aside. Use a blender or immersion blender to puree the braising liquid. It should turn into a thick tomatoey gravy. Season the gravy with salt and pepper, if needed. Slice the pot roast into thin slices.

Mound mashed potatoes on a plate. Top with slices of pot roast and carrots. Pour the gravy over the meat and potatoes. Bring some gravy to the table. Enjoy!

roasted leg of lamb with spring vegetables

Well, well, this post is a bit delayed considering I cooked the lamb on Easter, but it was delicious and most certainly worth writing about. Holidays around these parts mostly focus on the food and to celebrate Easter I cooked my first leg of lamb. I love lamb, but rarely have a reason to cook more than a few shanks or meatballs—being a family of two and all. This year I decided to go all out and invited 10 people plus a leg of spring lamb to the party!

I used Judy Rodger’s recipe from the Zuni Cafe Cookbook. Her roasted meats have never let us astray. For this recipe, you’ll want to salt and tie the meat a day or two in advance, but it will only take about an hour to cook and rest. It is crucial not to overcook the lamb and loose the tenderness of a young lamb.

Roasted Leg of Lamb with Spring Vegetables, from the Zuni Cafe Cookbook
One 3-4 lb leg of spring lamb, off the bone
1 branch rosemary, leaves stripped off
6 cloves garlic, smashed
salt
kitchen twine

For the sauce
2 T butter
2 T flour
1/2 cup red wine
1/2 chicken broth
salt and pepper

For the vegetables
2 bunches carrots, sliced in half lengthwise
2 bunches spring onions, sliced lengthwise thinly
2 bunches beets, cut into quarters
olive oil
salt and pepper

One day before you plan to cook the lamb, salt both the inside and outside of the lamb leg. Judy recommends a scant 3/4 teaspoon of sea salt per pound of meat. I followed this recommendation and it was perfection.  On the inside of the leg, press the garlic cloves into the flesh and sprinkle with the rosemary. Tie up the leg like a typical roast. Wrap lightly in the paper from the butcher or plastic wrap and refrigerate.

Two hours to three before you plan to cook the lamb, take it out of the fridge and bring it to room temperature. This is also a crucial step. Preheat an oven to 400 degrees.

Meanwhile, scrub and slice the vegetables. Toss them with some olive oil, salt and pepper and arrange them in a roasting pan with room for the roast in the center.

Once your roast has come to temperature, place it and the vegetables in the oven. A 3 – 4 pound roast will cook for about 40 minutes. You’ll want the internal temperature to 124 degrees at the thickest part of the leg for a just-pink roast. I’d recommend you check it a few times while cooking.

Once your roast has reached the correct temperature, remove it from the oven and place on a cutting board. Tent it with foil and let it rest for 15 – 20 minutes while you make the pan sauce.

Remove the veggies from the pan and place in a serving dish. Turn your oven to warm and put the veggies inside.

Place the roasting pan over two burners over medium heat. We didn’t have much fat in the pan so we added some butter. Once the butter is foaming, add the flour and cook until light brown. Deglaze with some red wine. Add the chicken broth and let the sauce reduce until thickened slightly.  Season with salt and pepper and pour into a serving dish.

Slice the lamb into 1/2 inch slices. Serve with veggies and a spoonful of sauce. We also served mashed potatoes to sop up that glorious lamb sauce. Super easy, minimal active cooking time and a crowd pleaser.
